I've been wanting to make these cupcakes for weeks now. I finally had the time a couple nights ago and they were incredibly YUMMY!
(I dropped an oreo on my heated floor and it melted in about 2 seconds!)

Chocolate Cupcakes
I got an awesome birthday gift from my bestie, Amanada - a Michael's gift card! I decided to use it on baking supplies and ended up picking up some great stuff. Rolled fondant, cupcake cups and some fondant cutters. Here are a few cupcakes I will be bringing over to my very-pregnant sister-in-law this afternoon:

Perfect Ensaimada...
I've watched my mom bake Ensaimada for as long as I can remember. When I was 5 she would always give me my own dough to roll out and bake along with hers. Mine, being so tiny of course would always burn, but I always remember having fun.
I've attempted to make Ensaimada quite a few times before but something always went wrong ...until now!

Gingerbread cookies
I don't usually get too excited about Christmas (working retail for 8 years has pretty much numbed any excitement I ever did feel lol). But! I was craving gingerbread cookies the other night - and hey, what else is there to do when your baby is sound asleep at 10pm!
Icing the cookies was kind of a bust. I'm going to make my own icing from now on - the ready-made stuff didn't impress me at all... It was either WAY too runny for decorating after following the heating instructions or way too hard to squeeze out of the bottle!
The cookies turned out GREAT. Tasted so yummy and were super soft! Definitely going to use this recipe again. (Note: if you are going to try this recipe, I suggest using about an extra cup of flour)
Icing-FAIL!

Red Velvet Cake
Sunday after the downtown Christmas parade I decided to attempt to make Red Velvet Cake. It was a pretty tricky cake (especially when I forgot to buy self-rising flour!). It didn't look all that pretty and was a little dense but it tasted great! I used ALL of my red liquid food colouring PLUS a ton of my gel food colouring and it still wasn't as red as I expected! I definitely want to try the recipe again - with the right kind of flour :)


Lemon Cream Cheese Cupcakes
Curtis wanted me to make him something "lemony and creamy" = Lemon Cream Cheese Cupcakes! They were SO yummy. I found this recipe on the Kraft website ...yes, I did cheat a little and it wasn't entirely made from scratch BUT they tasted so good!

Renee's Baby Shower
Here are a few pics of the cupcakes and mini cake I made for my sister-in-law's baby shower today. My first time ever making a cake with fondant! Not too shabby for my first time! I definitely want to keep practicing, so if anyone has an occasion coming up let me know :)

The cute zebra never did make it onto the cake... I didn't realize how small my cake pans were at the time!

My cupcake blog!
Yay! Can't wait to post pictures of my cupcakes! I have volunteered to make my beautiful sister-in-law's cupcakes and mini cake for her baby shower this weekend. I will make sure to take pictures of my progress next week :)
